Smoked eel has long been a specialty of the Siphon restaurant. The eels are smoked in a hut right beside the brewery. We huddle around the ashes on Autumn brew-days.
Cendre is a blend of styles from a variety of countries, with the chocolate malt character of a British stout, the seductive melon and pine profile of an American IPA and the drying citrus qualities of a Belgian Saison.
Malt: pale, munich, special b, chocolate, chocolate wheat. Hops: Citra. Yeast: saison EBC: 78.

Bitterer, dunkel malziger Beginn. Wenig hopfig, nur wenig Kräuter, moderat hefig. Spritzig, trocken, rund. Okay. 10/8/9/9//9

Bottle picked up Dranken Vande Woude, Pervijde Diksmuide, West Flanders, Belgium, had this Sunday 29th April 2018 whilst getting ready Chicken with Thyme and Lemon and Smashed Garlic Potatoes and a Fig Marscapone Ice Cream for dessert. Pours black or almost black with a big foamy off white head. More BIPA than Saison but, the yeast does add a little spice and it is quite refreshing. A little roasty and hoppy at the same time, fruity with a pleasant tangy bite. Like this. A7 A4 T7 P4 Ov15 3.7

Cloudy dark brown colour with thin head. Aroma and flavour have a real mix of spicy yeast, bitter, grassy hop and dark sweet malts. Light funk in the finish.

Bottle 330ml. @ home. [ As Siphon Cendre ].Clear dark black brown colour with a average to large, frothy, good lacing, mostly lasting, off-white to beige head. Aroma is moderate malty, roasted, dark malt, moderate hoppy, pine, spruce, light grapefruit, light licorice. Flavor is moderate sweet and moderate to heavy bitter with a long duration, wood, dark malt - chocolate, pine - spruce, dry. Body is medium, texture is oily to watery, carbonation is soft. Dark brown to black colored, medium creamy beige-tan head. Aroma is of roasted malt, coffee, medium citrus and floral hops, bit pine. Taste is medium sweet malt, roasted malt and plenty of dark chocolate and coffee, moderate citrus and pine, floral hops, medium+ bitterness, some spicy notes, dry finish and roasty coffee aftertaste, some roasty acidity, a bit too much of it. Medium bodied, average+ carbonation, oily. Roasty. (bottle, Bierhalle Deconinck, Vichte)

F: big, tan, good retention. C: dark brown, hazy. A: dark malts, bit coffee, caramel, chocolate, orange peels, bit spicy. T: spicy fruity, bit chocolate, coffee, dry on the palate, citrus, medium body and carbonation, quite nice, enjoyed. Sample shared with tderoeck, 77ships and Bierridder_S @ Bruges Beer Festival 2018.

Thanks to tderoeck, Bierridder_S & Rubin77. Sampled draft @ Brugs Bier Festival 2018. Dark brown, creamy coffee tanned head. Nose is nice blue cheese hop, very raw bitter coffee, interesting plum syrup. Taste is massively bitter coffee, lingering bitter, raw, dry, empty otherwise but still nice very harsh with low cheese & touch plum. Harsh but nice & tasty brew.

Bottle from Deconinck, Vichte. Dark brown colour, brown foam. Nose of roasted malts, pine, citrus, chocolate. Taste is dry, earthy, citrussy. Interesting beer.
