The second release of our beloved barleywine, but not as you know it. 100% pale organic malt. 24 hour boil. Organic British hops. Brewed in October 2020 and aged in a 400L butt for 17 months along with our mixed culture before packaging in early 2022. The colour is now a deep amber, due to the long boil and caramelisation of the malt, which brings sweetness, and therefore increases the ABV once the wild yeasts are added. Dark fruits, dates, and raisins come through on the finish.

Bottle at ash's. Pours deep ruby, nose is funk, balsamic, strawberry, caramel, leather, taste is rich, chewy caramel, raspberry, tart, vinegar, citrus zest, oak.

Big bottle thanks to cgarvieuk. Appearance - jet black with a thin brown head. Very flat on first inspection. Nose - molasses, balsamic vinegar and soy sauce. Taste - loads of balsamic, black olives and raisins. Palate - medium bodied, tangy, with measured sourness. Great length, under carbonated but works very well. Overall - very clever beer.

bottle at ashs ... deep dark ..no head ...quite still ..earthy meaty balsamic ...deep rich fruit ..earthy ..massive balsamic soft molasses..shame its so still(not flat ) but could do with little more

On tap at the brewery. Almost black with small beige head. Super fruity, raisins, figs, prunes, dark and dried fruit, caramel, bit vinous, superb! Very smooth and drinks easily. ABV is well hidden, slightly warming.
