Stout, Bourbon, oak, and age. Space Music, our first blend, is an unadulterated glimpse into our new wood cellar. No adjuncts, nothing to mask the beautiful interplay between these high gravity base stouts, the barrels, and the contours of time. Making this sort of beer is almost like passing the litmus test: if you want to make a range of great barrel-aged stouts, you have to be able to pull off the classic one. It’s like knowing how to cook a perfect French omelet, or roast a perfect chicken. You have to be able to master technique before you can bend the rules. We sought to check all of the classic boxes of wood-aging here: char, light smoke, oak-flavors of coconut and vanilla, tannin, pleasant oxidation, and, of course, Bourbon. The three base beers work in concert: the aged Russian Imperial Stout is lighter in body which allows the most wood-derived flavors and malt artifacts to come through. Lots of roast, ash, rickhouse, and char. The younger beers are bigger bodied and show less wood-derived character, so they contribute sweetness, bright chocolate, intense syrupy notes, rum raisin, and punchier alcohol notes. They enliven the older beer while also embiggening it.

Bottle split at Craft Beer Junction, thanks to Tipple 18/10/23. black with a khaki cap that veers edgewards. Nose is chocolate, spice, soy sauce, dark malts, light roast. Taste comprises umami, earthy roast, cocoa powder, tangy dried fruit rinds, toffee, modest barrel. Medium plus bodied, fine carbonation, semi drying close. Okay sipper if a little on the tarte side.

6/12/2023. Bottle shared by Colin, cheers. Pours black with a small beige head. Aroma is dark chocolate, woody, bourbon, coconut, vanilla, dark fruits, smokey notes. Moderate sweetness, medium bitterness, nice bourbon tart notes. Full bodied, smooth, soft carbonation. Rich tasty enjoyable.

Bottle shared at CBJ - big thanks to Mr. Tipple. Pours oily black with a creamy, beige head. Moderately sweet flavour, bit of iodine, some lightly tangy dark fruits, earth, nip of rubber, ashy roast. Medium to full bodied, lightly chewy, with fine carbonation. Lightly warming finish, more ashy roast, drying char, further subtle tangy dark berries. Tasty stuff overall.

Bottle shared at craft beer junction bermondsey tasting. Many thanks. A thick dark brown black coloured pour with a loose dark tan head. Aroma is smokey roast, liquorice, some blackened sugars, Alcohol,. Flavour is composed of semi sweet, tangy, vinous funk, red wine barrel, oak, brown sugars, roasted barley, woody, waxy. Palate is semi sweet, tangy, mellow carbonation.

Bottle share at CBJ. Thanks to Tips. Opaque dark brown beer, small tan head. Airy palate, semi dry, decent fine carbonation. Fruity dark chocolate, some chilli spice coming in. Mellow coffee. Airy semi dry finish. Nice, not sure I could drink loads.

Black body with thin tan head. Full aroma, chocolate, caramel and bourbon barrel. Full taste, chocolate, roast malt, caramel and bourbon with a long rich malt finish with a bit of bourbon booziness. Sip this.
