Daedalus is our Franconian-style Rotbier which was brewed together with our friends from Icarus Brewing in Lakewood, NJ. Crafted with German malted barley, specialty German malt, a blend of classic and new German hops, and our house lager yeast blend, this lager is soft, balanced, and complex. Double decocted, naturally carbonated, and lagered for over eight weeks, we taste notes of black currant, caramel, pastry crust, dark honey, and a clean finish. It is named after the Greek mythic figure, Daedalus, who was a brilliant inventor. While he is known for building the famous labyrinth on Crete for King Minos and the Minotaur, he is most famous for the wings he crafted for himself and his son, Icarus, to escape Crete.

Pours a clear, deep reddish-amber, with smallish, lingering head. Aroma is roast grain, malt, some woodiness. Flavors follow. Clean, crisp mouthfeel.
