If you have met Sam Payne, you have probably met Ruby the dog, our mascot. Ruby is a rescue dog that has come a long way in her 4 years with us and we love her to bits, as do most when they meet her. This beer is an homage to her. It is strong, unique and a ton of fun. This beer is delicious and is a celebration of Ruby the dog on her 4th birthday.
English Strong Ale or English Old Ale. This is a bit of a catch all term, meaning this is a high strength beer, that has some malt sweetness, and the hops are there strictly for balance. We decided to age this beer with French Oak for three weeks and the result is a distinctive oak character you typically find in wine, whiskey, bourbon, or scotch; but instead, in a beer. This beer is absolutely delicious

Original. Pours ruby red with a little lacing, no head. Aroma has candied malt and oak. Finishes sweet and tangy. Lively carbonation. On tap at St. Augustine’s.

On tap at the Alibi Room, pours a clear ruby red with a small white head. Aroma of scotch, sweet malt, and slight cough drop. Flavour of cough syrup / cough drop medicine and malt sweetness - a little cloying. No complexity here. Not good at all.
