Although a Voodoo god, Azacca enjoyed the simple things in life, sex, food and booze. Released in 2013 Azacca, the hop, represents many of the same sentiments. A big bold tropical fruit character is joined by a strong piney note, oranges, pawpaw, mango and some spice. While being big and bludgeoning on flavour it is complex in attitude. To showcase this intriguing hop we made an solid Amecian style IPA base, with pale malt, malted oats and rolled wheat. Allowing the hops to really shine, we added Azacca 10 minutes before the end of boil, during the whirlpool and as a triple dry-hop for good measure. Is it fit for the gods? Probably not, we better just keep it for us mere mortals then.

On tap at Royal Albert, pours a cloudy blonde with a small white head. Aroma brings out tropical fruity hops, especially kiwi. Flavour is exactly the same, with lots of kiwi upfront and pillowy biscuity malt to back. Nicely constructed and good use of the Azacca. Very good.
