Fermentation activated by lactic bacteria and yeast inoculum, including brettanomyces typical of spontaneous fermentation. Maturation in barrique for 12 months, fresh ramassin (“damascene” plums) added in maceration in Summer. Refermentation in bottle or keg.

2013 bottle. Aroma of sour fruits, tart berries, strawberry, oak, plum, white wine, sour apples, some funky notes. Flavour is light to moderate sweet and medium sour. Finish is rather dry. Lovely sour ale with a great balance between sweet and sour.

2017 bottle. Pours a light red with pinkish hints. Clear, but shows some murkiness on second pour. Hardly forms any head, even with quite hard pouring. Vividly fruity aroma of plums and cherries, with a fresh/prickly citric note in the background. The aroma suggests moderate sourness, with a light acetic hint, and very light funkiness. Taste feels a bit more sour than the aroma suggested, but it's still a delicate/soft sourness: half lactic and lightly acetic and citric. Taste notes follow the aroma: vivid fruitiness (same notes as per aroma, plus maybe a strawberry hint), minimal funkiness/brettiness. Medium body with close to no carbonation; a softly smooth, almost oily mouthfeel. I was perhaps expecting more depth, but this beer is a soft/delicate and highly drinkable interpretation of the style, and it's pretty good at that.

Bottle pour at Tørst, 2013 vintage. Pours pinkish opaque red. Plum, fleshy stone fruit, orange zest, blueberry, funk, delicate tartness. Decent body. Good.

Bottle sample at JBM. The carbonation is low, but it might be just because of the slightly older open bottle. Otherwise, thin body. Medium sourness, part acetic, part lactic, with moderate funk. Rounded by light fruity sweetness. What I really dig here is the moderate plum character though. Comes through quite cleanly, feels natural too. Pretty good one. Tasty, easy drinking.

0.375 l bottle shared with Jackass at Valhalla Craft Metal Beer Viking Bar, Zagreb. Closing night. Hazy amber to red, small off-white head. Cherry aroma, ripe fruit, cherry brandy, some wood, slightly fruity. Light juicy fruity cherry flavour, dry and quite sour. Light body, watery, bland. Started nice, finished lousy, like most of their beer.

Bottled 375ml. -at Goblet Zagreb. Unclear amber coloured, small off-white head that went away fast, sourish plum in the nose. Tart taste, notes of plum, fruits and light grapes with quite strong carbonation.

Hazy red no head. Well flavored with plums balanced lacto acetic sourness. Moderate lacto aceto sourness with a touch of fruity sweetness. The fruit works really well - providing a velvety envelope both the aroma and flavour.
