Fermentation activated by lactic bacteria and yeast inoculum, including brettanomyces typical of spontaneous fermentation. Maturation in barrique for 12 months, fresh ramassin (“damascene” plums) added in maceration in Summer. Refermentation in bottle or keg.

Tap @ CBC 2015, green session. Amber with a light tan head. Some red berries, funk, citric, leather and oaky notes. Tap @ CBC2015. Pours dark hazy orange with a small white head. Aromas of red berries, funk, citrus, light tannic notes, some oak. Lightly soapy. Taste is alike.

O, i tu juz jest taka fajna i z innymi sie nie mylaca sliwka. Leciutkie, srednio kwasne, chlalne, najzwyczajniej smaczne dzikie piwo owocowe. Lepsze sliwki niz w wiekszosci sliwkowych. No i na szczescie nikt ich nie wedzil, nie suszyl...

Draft - Vintage 2016 - Soured dark plums. Deep copper with a nice white head. Sour plum, tart and dry. Simple and nice.
