A Curious Cuvée collection of a traditional Lager base.

We only collected the 1st 30hl of the wort from the Lauter Tun (usually 56hl). This mimics collection of the first press of grapes, which are of the best quality. By doing this, we avoid the astringency you can get from the end of a wort collection and also means we end up with a stronger (ABV) beer.

Primary Fermentation with Champagne Yeast
Curious Brew undergoes a secondary fermentation with Champagne yeast. This was a what-if we did the Primary Fermentation with Champagne Yeast where it can impact flavour development.

Aged under pressure in the tank for 9 months
This helped to develop clean and complex flavour profiles.

Aroma – Pear Drops & Green Apple (high-pressure maturation), Clove (Champagne yeast), Banana (long maturation time and yeast blend)

Taste – warming sensation due to the higher alcohol but clean and slightly acidic finish. Most Pilsners would typically finish at pH 4.2. This finishes at pH 3.8 (yeast & tank time). It’s also only natural carbonation from the yeast in the tank.

On tap at Curious Brewery Ashford. slight haze gold colour lasting white head. unfiltered lager. almost a saison farmhouse yeast aroma. more of that flavour in mouth then a lemon finish. some tropical fruit flavour. finish is dry and lasting. doesn't entirely hang together. too much going on.
