Inspired by the most historic of IPAs. This beer has been aged in oak with mild yeast for 3 months. We recommend leaving it somewhere cold and dusty for a while to let the funky brett work its magic.

Bottle at Craig’s. It pours deep red-amber with a small white head. The nose is rich, fruit cake, orange muffin, dried fruits, warming alcohol, earth and wood. The taste is rich, fruit cake, wood, earth, barnyard, dirt, booze, candied peel, fruity, rum and mild acidity with a dry finish. Medium+ body, fine carbonation and oily mouth-feel. Well rounded, rich and quaffable.

Bottle at home... Copper... Small off white head... Soft fruits... Soft toffee malt... Zezty orange fruits nose ... Soft zezty orange... Light oak... Lightest rum... Soft fruits.. Nice

75cl bottle from Appellation Wines - number 150 of 161. Appearance - caramel with a thin attractive layer of lace. Nose - wood spice but it’s subtle. Lots of tangy citrus - lime marmalade coming out because the alcohol is up there. Maybe some gingerbread. Taste - lime and lemon intermingled with wood spice and the big alcohol note again. There’s lemon tart note on the finish. Palate - medium to full bodied, big tangy texture in the middle and then considering all of the giant volatile flavours aforementioned, the finish is remarkably balanced. Overall - I’m not a huge fan of barrel ageing but it would appear that the subtle use of 3 times used barrel and the careful balance of the hops and malt against the alcohol strength has produced the beer they decided and it is harmonic. This should be reviewed in a few months to see if the brett has evolved it further as we’d expect it to.
