Made entirely from the Wickson crab apple harvest at the Billingsley Cider orchard (Western Cider's orchard in Montana's Bitterroot Valley). This ferment was slow and steady with amazing stone-fruit aromas and a bright tartness.

Sample at the cidery, 8/25/24. Clear pale yellow. Aroma of dry apple, pineapple. Taste is sweet apple, pineapple, hint of vanilla. High carb. Nice.

On tap at Western Cider, pours a clear pale blonde with a small white head. Aroma brings out dry, musty apples, with a champagne-like funk. Flavour reveals the tart crabapples upfront, with light mustiness and a gentle acidity. I like the apple character here. Very good.
