On tap at Schilling Cider House - Seattle, pours a clear blonde with a small white head. Aroma is loaded with fire roasted pepper and subdued crisp apple skins. Flavour is fiery, with lots of fresh jalapeo, crisp apple skins, and low residual sweetness. Really nice pepper character. Not the most complex cider out there, but they did a great job with the pepper roasting.

The cider that got me in the door! Draft pour enjoyed at Schilling Cider, Fremont. Pale, cloudy yellow pour. Aroma is a wonderful balance of sweet apples and spicy peppers. Flavor is equally as balanced, and delicious. I like a sweet and spicy cider. This doesn't eliminate the heat. It jumps out at you, has a good kick, and lingers. Apple sweetened battles it the whole way. Just a slight tingling spice in the end. A fantastic cider here. This is what I look for in the cider world.
