Specialty malted grains, unmalted wheat, spelt, noble hops

Tasting Notes: It has a bright citrus nose with aromas of damp oak, lemon rind, and wet hay. It has a golden straw hue and tastes of candied citrus fruit, tangerine, lemon, melon, and honey. It is creamy and earthy with moderate tartness and acidity, finishing with a smooth, rustic, dry linger.

Cellar Notes: Ale brewed with Propolis microbes, wild yeast, and micro-organisms - Age for +4 years

375mL bottle, pours a clear golden with a small white head. Nose is very buggy, with lots of barnyard funk, rustic saison yeast, gentle tartness, oak, and some lemon rind. Flavour is tart and complex, with rustic saison yeast, lemon rind, oak, and some bugginess. Not really noticing the cognac, but I do get plenty of oak. Buggy, grainy, tart finish. Very interesting and quite enjoyable, but shy of excellent.
