Made from a Nomad base and blended with true cider apples, this cider has it all: A structured and disciplined cider driven by a steely backbone of racy acidity. Tart freshness highlights intense citrus that lifts and lengthens the bittersweet wild-apple flavours of the Nomad cider – the foundation/base cider for this expression. A brief maturation on light lees adds texture to an underlying savoury mineral complexity resulting in a clean and restrained style consistent with dry white wines coming from classic, cool-climate origins.
Suggested Food Pairing: Oistre Brut is an expression of purity and focus crafted with the distinctly edgy, linear precision of true cider apples with the intention of creating the perfect pairing with fresh island oysters. Every year Double Hill submerges 100 bottles to rest in the cool and quiet darkness of the ocean floor.

750ml (thx, Mathieu A.!) shared with Farees @ Matt's new place. Appearance: clear golden with a white head. Aroma: nice apples, some sweetness, apple seeds, some tannins. Taste: along the same lines. Overall: very nice, good one.

750mL bottle, pours a clear pale golden with a medium, quickly-dissipating white head. Aroma has some champagne-like effervescence, dry toffee, and golden apple skins. Flavour is quite dry, with champagne-like effervescence, gentle toffee, and golden apple skins. Crisp, fairly dry and effervescent. Very good.
