On tap at Fair Isle, pours a minimally hazy golden orange with a small white head. Aroma is complex, with lots of rustic saison yeast, wild yeast, and subdued cherry. Flavour is dry and funky, with lots of complex wild yeast, rustic notes, soft cherry notes, and a slight herbal note from the bay laurel. Dry, funky, rustic, spicy. Perfectly harmonious. Excellent.
