Aged in oak white wine barrels for 6 months with several dollops of honey in each barrel. The addition of wild Brettanomyces yeast gives a funnky, barnyard flavor in addition to the honey and smooth vanilla notes. Expect a light acidity, rustic haze, with a tannic body.

On tap at Goose Island Taproom, pours a clear yellow blonde with a small white head. Aroma brings out lots of funky wild yeast, fermented out honey, and some rustic saison yeast. Flavour is huge on the wood, with wild yeast, fermented out honey, and rustic notes. Complex, woody and buggy. Excellent.
