For this collaboration with Boundary Brewing Co, we went super old-school with no boil and locally foraged botanicals. We infused juniper branches in the mash, steeped wormwood for bittering, and added juniper berries for more flavour. This raw ale was then primary-fermented with kveik before resting in barrels with our full mixed culture including brettanomyces and lactic acid bacteria.

500mL bottle, pours a deep dark amber with almost no head. Aroma brings out tons of juniper branches -- like I'm licking sticks from the forest -- along with wild yeast, some wood, and gentle wild yeast. Flavour is along the same lines, with wild yeast, tons of branches, barrels, and lactic sourness. Lots of branches, tartness, and oak. Not the most complex beer they've done, but reasonably done and certainly above average for a gruit.

Poured from the tap. Hazed amber orange with small white head. Wormwood, mild acetic vinegar quality. Kind of an earthy mild oud bruin. Interesting.

Dark amber, bright. Tart, with lots of herbaceous accents. Brewed with old Boundary, and a blend of the product from each of these breweries that was aged.
