Chanter la Pomme is a blend of cider, Seyval Blanc, Muscat and dark plums, all from the 2021 harvest. We made it with our Quebecois friends @cidre_intrus (2 groups of fruit nerds = one mega-tasty blend).
Together, we decided to build it around our rosé Muscat — it takes the spotlight with whiffs of watermelon jolly ranchers, candied grapefruit and sweet violets. Ontario Muscat is out of this world. To it, we added cider aged on dark plums and Seyval Blanc with crabapples, hand-picked under the September sun. Just when you’ve had enough of the sweet Muscat aromas, astringent plum skins and crabapple tannins jump in, before gently setting you down on plush Seyval Blanc. It’s harmony and juicy chaos in all the best ways.

750ml shared with Phill @ Matt's new place. Appearance: hazy peachy with a white head. Aroma: smells like a grapefruit to me that somehow can be split into plums skin, funk, and grapes must. Taste: along the same lines, very bubbly that makes it a bit watery. Overall: very interesting and unusual.

750mL bottle, pours a cloudy orange with a small white head. Aroma is quite strong, with lots of strong vinous notes, somewhat abrasive perfumey floral notes, and crisp apple skins. Flavour is very fruity, with lots of dark plums, perfumey floral notes, light vinous notes, and some crisp apple skins. Doesn't really seem that cidery with all the other stuff in here. The booze is certainly felt, leaving a somewhat abrasive, perfumey, moderately acidic finish. Good, but not entirely cohesive.

(750ml bottle from the cidery webshop) Pours deep blush with no head. Aroma of red plums, watermelon, red berries, aromatic grape-y Muscat, perfumed flowers, crisp apple undertone. Flavour is low acid, nice smooth plum and watermelon, floral Muscat, rounder white wine that is probably more Seyval, nice mineral crispness, finish has some perfumed flowers, plum tannin and nice slightly peppery crabapple-laden bite. Medium-bodied, slick, lovely effervescent moderately high carbonation. Definitely feels vinous but you don't necessarily notice the high ABV until you look at the bottle more closely as it's also delightfully drinkable. A super-fun, very floral and complex unclassifiable beverage from Revel.
