For this special production of Bersalis Kadet the beer continues to age in wooden barrels after the main fermentation. For this purpose barrels were selected in which Oud Beersel’s Lambic beer has previously matured.

As the Pediococcus and Brettanomyces are present in both the barrel and the ambient air, the beer undergoes a second fermentation in the wooden barrels. This is how the Brett character develops and how fresh sourness is created in this light and bitter beer.

After 12 months of ripening in wooden barrels this unique beer undergoes a third fermentation in the bottle resulting in an optimal taste experience.

37,5cl bottle (5,5%, bottled 15/05/2018) from Prik&Tik Kampenhout. F: huge, egg-white, average retention. C: deep gold, almost clear. A: sour fruity, green berries, sour apples, bretty, woody, lactic touch. T: sour fruity, woody, green peach, sour apples, woody, bretty, bit lemony puckering, medium body and carbonation, very refreshing, good one, fully enjoyed.

Shared @ Koelschtrinker's tasting. Smooth sourish beginning. The beer starts not too deep, horse blanket and wood there, tart and dry. The sourness is on the bitter tart side, wood is there, not too much aroma beside this.

Pours clear golden with a off-white head. Aroma has notes of malt, tart, funk, citrus, hint of vanilla and barnyard. Taste is light sweet and light to medium sour with a long slightly dry, funk, tart and citrus finish. Body is medium, texture is thin to oily, carbonation is fizzy.

Bottle shared with Koelschtrinker. A slightly hazy golden beer with a small white head. Aroma of mild sourish fruits, apples, pale malt, oak. Taste of mild sourish pale malt, grapes, some apples.

Bottle at Beer Merchants Tap. It pours bright golden - dry with a medium white medium white head. The aroma is grape must, apple skin, funk, brett, straw, cracker, tonic water, dry wood and bit floral. The taste is firmly dry, crisp, dry wood, lemon peel, musty, funky, granny smith apple skin, pear skin, bit of sherbet, straw, tonic water and pith with a drying finish. Light - medium body and high, foamy carbonation. Grew on me. Quite dry and crisp. Quenching.

Flavor is light sour, malt, yeast, barnyard, leather, tart fruity, grapes. Medium body, average to lively carbonation, light acidic finish. Nicely balanced. 110518
