For this special production of Bersalis Kadet the beer continues to age in wooden barrels after the main fermentation. For this purpose barrels were selected in which Oud Beersel’s Lambic beer has previously matured.
As the Pediococcus and Brettanomyces are present in both the barrel and the ambient air, the beer undergoes a second fermentation in the wooden barrels. This is how the Brett character develops and how fresh sourness is created in this light and bitter beer.
After 12 months of ripening in wooden barrels this unique beer undergoes a third fermentation in the bottle resulting in an optimal taste experience.

Bottle, "5%". Clear golden with small off-white head. Aroma is malt, fruit, funk, little brett and lemon. Flavour is malt, funk, little lemon, medium dry, wood, citric, grass, little sweet and a little sour.

Hazed golden color with a white top. Fine pleasant aroma. Ok carbonation level. Pleasant to drink. Balanced acidity and a fine dry ending. Wood, citric, green apples, yeast and herbal flavor. Smooth and easy drinkable beer in this genre.

ABV: 5.0%. Clear medium yellow colour with a average, frothy - fizzy, good lacing, mostly lasting, white head. Aroma is moderate malty, wheat, pale malt, wood, leather, grapes, apple, oak. Flavor is moderate sweet with a long duration, apple, grapes, wood - oak, pale malt, medium dry, light leather. Body is medium, texture is watery, carbonation is soft. [20200402]

Bottle, 375 ml corked. An unclear golden colored body is topped by a white head of moderate size. There's some pale malts and light bread in the aroma, some citrus, lemon juice mostly, hay and grass, and a light funky, leathery barnyard touch. It's tart and medium bodied with a pleasant carbonation. Funky and leathery barnyard flavor with lemon juice, grass, hay, light bread and a faint doughy touch. Lasting slowly diminishing finish. A bit gentle this one, but refreshing and quenching, and very easy drinkable. 180303
