For this special production of Bersalis Kadet the beer continues to age in wooden barrels after the main fermentation. For this purpose barrels were selected in which Oud Beersel’s Lambic beer has previously matured.
As the Pediococcus and Brettanomyces are present in both the barrel and the ambient air, the beer undergoes a second fermentation in the wooden barrels. This is how the Brett character develops and how fresh sourness is created in this light and bitter beer.
After 12 months of ripening in wooden barrels this unique beer undergoes a third fermentation in the bottle resulting in an optimal taste experience.

Golden color, white head with short to medium retention. Aroma with a high presence of barnyard and bretty notes, slightly wooden. Flavor with a decent sourness, wood, slightly lemon peel. Light to medium acidic in the final. Enjoyable.

Bottle from Etre. Pale, unclear, straw with white fizz. Oaky and woody, with minerals, lemon and straw. Nice but not very complex. Very dry.

Bottle shared at THT January (Platypus Edition), at Kwartje Platypus Information and carecenter. Slightly hazy golden with white head. Light sweet malts, citrus, mineral,grassy, dry. Moderate sweet and light bitter. Medium body, soft carbonation. Quite dry feel. Nice.

Bottle shared at THT January (Platypus Edition). Bit hazy light golden with white head. Funk, lemon, light spicy yeast, soft malts, light herbs, some lime, soft lime even. Medium sour and light bitter. Medium bodied with sparkly carbonation. This is quite nice actually!

Bottle: Poured a dirty pale yellow color ale with a large foamy head with light retention and some lacing. Aroma of oak, tart notes with light vinegar notes is enticing. Taste is a nice mix of tart notes with some oak and funky undertones with a dry balsamic vinegar finish. Body is about average with good carbonation. Complex with good drinkability.
