For this special production of Bersalis Kadet the beer continues to age in wooden barrels after the main fermentation. For this purpose barrels were selected in which Oud Beersel’s Lambic beer has previously matured.

As the Pediococcus and Brettanomyces are present in both the barrel and the ambient air, the beer undergoes a second fermentation in the wooden barrels. This is how the Brett character develops and how fresh sourness is created in this light and bitter beer.

After 12 months of ripening in wooden barrels this unique beer undergoes a third fermentation in the bottle resulting in an optimal taste experience.

Bottle. Unclear golden body with a quite big, lacing white head. Nice funky, pleasant aroma. Flavor is mild pale malt, a bit fruity, some lemon, some wood and funky acidic. Fine balanced body and pleasant, refreshing acidic aftertaste. Very nice and refreshing lambic kind of flavor, the wood character is less dominant than expected, a rather nice and easy beer it is. Easy drinkable.

Bottle from Beer Republic. 2020 vintage. Aroma is bretty funk with notes of grapes, grainy malt, some citrus and a hint of apple, lemon, peppery yeast. Flavour is medium sour with a dry conclusion. Body is medium. Dry, funky, grapey. Fine!

Bottle from lowcostbeer.com. Clear gold with moderate fizzed white head which settles to a thin top. Aroma has very nice subtle but inviting hints of citrus, oak, apple and barley. Taste has plenty of fruity yeast esters with apple peel, citrus and well as oak. Some funk and dry sourness in the finish. Light bodied, brett carbonation. Very nice.

(Bottle, vintage 2020) Golden colour, slightly hazy, with foamy, white head. Fruity nose with red apples, oak wood, dried pineapple, orange, hay, honey and barnyard. Fruity, tart taste with notes of of oak wood, red apples, pineapple, orange, hay, marzipan and barnyard. Low bitterness. Medium body, dry. Fresh and tasty, with a balanced acidity. Very nice.

Vintage 2020. Alc. 5.5.%. An orange colour, a head is medium and white. Aroma has green apples, sourness, light grapes. Taste has green apples, barnyard, quite strong sourness, light wood and grape. Medium bodied. Balanced, sour, very nice.

Bottle from the Low Cost Beer online shop. Pours hazy golden with a thin white head. Aromas of funky cider, oak, sherbet. Taste is yeast esters, funk and oak again. Sharp sherry almost. Dry finish.

375mL bottle, pours a hazy golden orange with a small white head. Nose brings out champagne-like effervescence, moderate barnyard funk and gentle citrus. Flavour is loaded with wild yeast, citrus skins, and champagne effervescence. Not the most complex as a lambic but it's a damn nice sour ale.

Bottle. Can’t recall where from. 5.5%. Horrific amount of lumps in this. Solid off white head. Nose has bretty oak. Touch of vanilla. Some wet cardboard. Taste is tart and dry. Medium body. Foamy carbonation. Bit of a nondescript finish.

375 ml bottle. 2020 vintage. Pours a bright amber with no head. Aromas of barnyard funk, oak, grapes and sharp wheat. Flavors of tart grapes and gooseberries, a bit of Brett and almost buttery oak, old citrus and more sharp wheat, tart finish. Nice.
