Amarillo Hopkins is a "SMaSH" style IPA. SMaSH is an acronym for "Single Malt and Single Hop", and in this case that means that the beer is brewed and dry-hopped with 100% Amarillo hops and only German Pilsner malt. This combination produces a light straw hue with vibrant notes of grapefruit, tangerine, lemon, and apricot in the flavor and aroma of the beer.

Interesting fact: no Armadillos are harmed in creating this beer, despite its oft-mispronounced name when ordered by newcomers to the pub.
