Sim is 7.0% IPA named after our head brewer Jack Snyder’s favorite furry feline friend. Naturally, it’s hopped entirely with the Pacific Northwest varietal Simcoe. This modern classic cultivar — a real darling amongst brewers — is beloved for its combination of citrus rind, berry, woody pine, and stone fruit character.
Like Simcoe (the cat), Sim is quite soft and fluffy. We brewed it with a base of English pale malt, plus an abundance of malted and flaked oats.

Citrus and a little cat piss. Not in a terrible way. Hazy yellow pour with decent head and lacing. Lemon. Tap at brewery

Draft at Rustico Ballston. Poured a slightly hazy, vibrant yellow color with a medium sized white head. Aroma was pleasant citrus. Flavor was light creaminess. Easy to drink, to see citrus, virtually no bitterness, except a light, hop bite at the end.
