A collaboration with Brasserie Thiriez of France. This is a French-American farmhouse ale using WYeast's 3711 French saison yeast which was cultured from the Thiriez house strain. We used North American barley and wheat and a blend of American and European hops (more specifically Caliente, Sterling and Styrian Celeia). Saison des Flandres is crisp and dry with beautiful spicy yeast driven flavors/aromas.

The beer is a pale, dull yellow. Cloudy, just able to see my fingers through the glass. Medium head, white and fluffy. A little lacing. The aroma is peppercorns, lemons and earth. Big fresh pale malt note. Lots of spice. Some grass. Taste similarly has plenty of saison yeast spice. Mild bitterness with a bit more in the finish. Nice simply sweet grains in the beginning but it dries out pretty well. More grass with just a touch of citrus. Very mild sour flavor bouncing around. Light feel with some body from the grain. Easy to drink and refreshing. Very nice saison if not terribly adventurous. Definitely can see the Thiriez influence.
