This beer is a collaboration with our dear friends at Pohjala. We were inspired by a few different ideas. First, we were excited to try an innovative new product called Yops, a hop extract that is naturally derived from fermentation. We thought that could go well with various botanicals, which of course should be local to Denmark and Estonia. Pohjala brought the ones from Estonia out in their suitcase. Finally, we thought a wheat beer with a wheat beer yeast was the best platform to bring all these ideas together.
