Gose Style Beer
Most brewers spend a lot of time and effort keeping lactobacillus out of their breweries; it was the first thing we brought in (it still has to stay in the corner though). We blend together two different beers to make Troublesome. The first is a somewhat uninteresting wheat beer and the second is an overly acidic & funky beer fermented solely with lactobacillus. We blend the two beers together with coriander and salt at the tail end of fermentation to create a mild, lemony tartness and a fuller sensation of mouthfeel. And yes, it's hard to make.
Hops: Northern Brewer
Malts: Pils, Wheat Malt, Flaked Wheat, Flaked Oats

Pours hazy straw yellow with a huge white head, some lacing. Aroma of wheat, corriander and mild smokiness. Taste is grainy, wheat, citrus, mild tartness, Lenin and some saltiness

12 ounce bottle. Give this one a shake before pouring. Cloudy pale yellow color with a small creamy white head. Faint yeasty nose with a hint of Meyer lemon. Complex flavors abound here. Tangy yeast, barnyard funk, lemongrass, lemon curd and hay come to mind. Soft on the palate and easily drinkable, but don’t quaff this. Sip it and savor it. The finish is reminiscent of a slightly salty lemon drop. Long lingering sour citrus aftertaste flashes a subtle hint of lactobacillus. Nicely done!

Bottle from St Gambrinus, Brooklyn. It pours cloudy gold with a small white head. The nose is earthy, cracker, minerals, hay, barnyard, vegetables and smoked cheese. The taste is crisp, earthy, funky, musty, minerals, coriander, cheesecake, minimal acidity, quite dry, cracker and some salted lemon with a dry finish. Light - medium body and moderate, foamy carbonation. I wish this was way more tart and had some more acidity. A bit of a disappointment.

12 bottle from a San Diego liquor store. Nose is banana, coriander , white bread, and a hint of tartness. Lightly hazy yellow with a medium white head. Flavor is fruity, coriander, a slight tartness, and yeasty.

Bottle, hazy straw color. Aroma is a nice tart lemon, wheat and hints of spice. The flavor is much the same. Smooth light palate with the salt showing lightly and a nice kick of coriander in the finish. The body is last ghter with a refreshing finish.
