Gose Style Beer
Most brewers spend a lot of time and effort keeping lactobacillus out of their breweries; it was the first thing we brought in (it still has to stay in the corner though). We blend together two different beers to make Troublesome. The first is a somewhat uninteresting wheat beer and the second is an overly acidic & funky beer fermented solely with lactobacillus. We blend the two beers together with coriander and salt at the tail end of fermentation to create a mild, lemony tartness and a fuller sensation of mouthfeel. And yes, it's hard to make.
Hops: Northern Brewer
Malts: Pils, Wheat Malt, Flaked Wheat, Flaked Oats
Secret Ingredients: Coriander and Lactobacillus

12 ounce bottle into tulip glass, no bottle dating. Pours slightly hazy golden straw color with a 1-2 finger dense and fluffy white head with great retention, that reduces to a small cap that lingers. Nice spotty soapy lacing clings around the glass, with some light streaming carbonation. Aromas of big tart lemon, lime, green apple, white grape, coriander, sea salt, wheat, cracker, bread, herbal, straw, grass, light pepper, and herbal/yeast earthiness. Very nice aromas with good balance and complexity of fruity/earthy yeast, salt/spice, and pale malt notes; with good strength. Taste of lightly tart lemon, lime, green apple, white grape, coriander, sea salt, wheat, cracker, bread, herbal, straw, grass, light pepper, and herbal/yeast earthiness. Slight fruity tartness on the finish; with lingering notes of lemon, lime, green apple, white grape, coriander, sea salt, wheat, cracker, bread, light pepper, and herbal/yeast earthiness on the finish for a good bit. Good balance and complexity of fruity/earthy yeast, salt/spice, and pale malt flavors; with a good malt/tartness balance and zero cloying flavors after the finish. Medium carbonation and light-medium bodied; with a very smooth, crisp, and lightly saline/bready mouthfeel that is nice. Alcohol is well hidden with zero warming present after the finish as expected of 4.3%. Overall this is a very good Gose style. All around good robustness, balance, and complexity of fruity/earthy yeast, salt/spice, and pale malt flavors; and very smooth and crisp to drink. It was not as tart as I was hoping for, but the flavors were very well balanced. A nicely enjoyable offering.

$2.95 bottle from Wine Warehouse, CHO. Pours clear golden with an inch of white head. Smells of wheat, grass, fresh leaves. Taste is sweet wheat, cereal, grains... maybe what I imagine dry cat food to taste like (OK, OK, Iβve tried it, this is what it tastes like).

Notes from 2013 takeover at Monkβs Pub. Looks like fun, even though itβs almost as pale as the Bug Flats beer. A nice puffy head over a whitish cloudy body. The smell is kind of spicy, and a bit of a slap of pale malt. Taste is quite a slap, too. Very tart and lemony, like a Berliner Weisse. A bit salty, but only like the "electrolytes" in a Gatorade. Mouthfeel is too thick to be the lawnmower beer it appears as. Zesty taste contains the spiciness, coriander is not quite pronounced among the general spice bouquet.

From the 11/2014 3R6P gathering. +++ Sampled from a 12 oz brown bottle this beer poured a hazy yellow color with a small foamy white head that faded quickly and left a bit of lacing. The aroma was musty - in a bad off way - with coriander and phenol. The flavor was musty, bred dough, phenol, egg white and a bit of coriander. Long egg white and must finish. Medium body. Not good.

Bottle. Ours crystal clear golden, medium white head, dissipates slowly, nice lacing. Aroma is light, sour mash, lemon, wheat, coriander. Flavor is very light sour, lots of coriander, a bit of lemon, wheat, a bit of banana. Light body, minimal salt. Fair for style, not distinctive above a typical hef.

Pour is a hazy dull yellow with a large white head. Aroma is wheat malt, bitter fruit with some floral notes. Flavor is a heavy dose of wheat malt followed by some tart citric acid. Finish is wheaty with maybe a bit of that coriander left on the tongue. Not really that much salt but I could really do without something overly salt heavy. A decent beer.

Tap at CBC 2014. Beer in the glass light yellow, small head. Malty sourish aroma. Starts mild malty, light sourish. Light fruity lemon notes. Finish again milder, still light fruity. Okay.
