750 c&c from Whole Foods in Davis, CA. Pours hazy gold with a 3 finger foamy white head. Aroma is grassy and lemony with a hint of funk. Near full bodied til the carb leaves. Flavor starts grassy and lemony, then moves on to a dry earthy/funky place. It’s so good I keep expecting some oak to pop out. With time I get a little peppery spice. Mild tongue tingle. Finishes dry and mildly earthy with grass. Extremely tasty.

Pours a nice light orange, yellow at the edges. A sunny, glowy shade of beer. Big puffy white head. Lots of lacing. A nice sheet of bubbles sticks around for quite some time. The aroma leads with sweet, fresh grain. It’s followed up by a solid mix of saison flavors. Lemons, earth, grassy hops, light pepper, a nice mineral note, dusty barnyard and some mild funk. The taste is dry with lots more good saison flavor. It starts out with that fresh grain flavor. Then pepper, earth and some light stone fruit come in. It dries out in the finish, and the hops kick in with some grass and herbal flavors. Mouthfeel is light and easy on the palate. Nice beer. It’s a very solid saison, true to Dupont’s formula though no clone. I’d definitely be interested in trying more from Mystic.

Bottle at home in Salisbury. Pours lightly hazy yellow-gold with a wispy, white froth head. Very clean, fresh aroma, some grass, dry dough, a bit of lemon. Light to medium sweet flavor with a very slightly sugary doughy malt character, some bright straw, ripe lemon, faint sweat. Medium bodied with average, massaging carbonation. Great body and mouthfeel. Clean finish with very mellow warmth, pale and doughy malts, touches of yeast and grass, low bitterness. Great balance overall. Super drinkable. For a saison this is just what I want.

This is a first, 12.68 oz c&c bottle, hmmm looks like the RR and Lost Abbey bottles, have they been misleading us? Either way poured into a plastic hotel cup because I am in a hotel in Woburn, MA. Big pop of the cork with an all head pour, stupid plastic cup. After a few tries I get beer in there. Thick medium clarity dull golden colour (yeah, I am going Canadian on this one) with a pillow of cloudy foam. Thick ass lacing. I will take Dany’s line and say this is a "comfortable" saison. Its good on all accounts but a little too much esters, just a tad too sweet, at times a tad blunted as well. But the nose has a nice rustic character and pretty straight forward saison. But I am in Pretty Things country, so I need some more jena se qua from my saisons.

Belgian Beer Fest Boston. Cloudy yellow color, fluffy white head. Aroma of hay, straw, pepper, dusty barnyard. Taste is smooth and peppery straw. Very nice. No need for tons of alcohol.

Pours a hazy golden lemon color with a huge fluffy white head that persists forever and leaves lots of lace on the way down. Smells of lemon and pepper with a spicy edge. Belgian yeasty phenols and a hint of earthy spicy hops. Sweet and malty flavor with hints of bread caramel and lemon. The flavor has hints of yeasty and spicy but not as much as the nose lead me to believe. Medium body with a spirited level of carbonation and a sweet crisp mouthfeel. That’s a nice saison right there. Its sweet with a bit of tart and a bit of spice but it all works together really well. This has been my favorite so far from the Mystic Saison Brewery.

A hazed golden saison with a thin lacing white head. In aroma, nice sweet fruity esters with light sulfur notes. In mouth, a smooth herbal spiced malt with light talc notes, orange peels, quite classic. Tasted at Drink Craft Beer Summerfest Fest, July 14 2012.

Pours deep cloudy amber into a tulip. White head with medium retention recedes to skim surface. Caramel and sourdough aromas. Sweet caramel and toasted sourdough front to back. Lasting bitter sour lemon finish.
