The third of Cuvée series: a 10% Super Saison from a blend of 6 barrels with mixed fermentations of Saison yeasts and Brettanomyces from Escarpment Labs. Rich notes of pineapple and hay with a big funky backbone. Each time we empty a Cuvée barrel we leave a small amount of beer behind to inoculate the next batch, each successive batch is an echo of the previous ones microbial community.

On tap at the brewpub, and a bottle at home. Big citrus notes with some nice Etro picks fruit and alot of yeast with some woody barrel notes. The tap version was funkier ad more tart the bottled version less so. Good barrel notes light funk, medium bitterness. Some are on this will be interesting.

500mL bottle, sent from wilco (thanks a lot, Mike), pours a hazy golden with a small white head. Nose brings out lots of Belgian yeast, fruity esters, some alcohol and candied sugar. Flavour is more like a tripel, with candied sugar, alcohol and fruity esters. Again, more like a tripel than a saison. Not overly authentic or complex, and it gets cloying after a while. Not my thing. Disappointing.

(tap) cloudy yellow colour with a small white head; aroma of apples; balanced flavour with a long, light bitter finish
