Sturdy farmhouse-style ale that showcases a yeast from northern France, along the Belgian border. The earth and spice notes as well as the citrus fruit character are yeast driven. The balance and complexity of the aroma will change as the beer warms in your hand. Medium bitterness and a honeyish malt with a semi-dry finish. Oregon cherries are added post-fermentation to make a tart, bright red ale.

On draft at the brewpub. Pours a clear amber with an off white head. Malty nose. Flavors of cherry and earthy pepper. Sweet but not over the top.

At the source: pours bright red with a whitish head. Aroma is cherries and soap and stuff. Taste is sweet and cherries and little bit soapy. Finish is mineralish. Not great.

16 oz draft pour at Mad Fox. Visually, this beer was a clear ruby red color with a light pink head. Aroma was light cherries, funky yeast notes. Light sweetness. Touch of cherry skins. I totally expected that medicinal cherry syrup taste but was pleasantly surprised to find that the cherries actually still allow the saison to shine through. Very tasty.

16 oz pour on draft at Mad Fox. Served in a goblet. Slightly hazy amber red with pinkish white head. Aromas of light cherry skin and fruit, light funk. Tastes of cherry, herb, light funk, a little hay. Medium body with a dry finish. Pretty good, cherry is nicely balanced.
