Aged for over a year, giving a gorgeous depth of flavour and oakiness. Fermented with our house culture, a blend of wild yeasts and bacteria, giving a punchy sourness and accentuating the subtle white wine flavours from the barrels. This beer was then rested for several weeks in steel tanks with cherries and lemons, enveloping the base flavours with a thick coat of fruity goodness and balancing the oak.
