Missouri Farmhouse Ale aged in Gin Barrels with Spruce Tips.
We once again sourced these gin barrels from a broker we have been using for almost a decade to supply us with barrels that are as fresh as possible. Like the last iteration of Gin BDP, the botanical and herbaceous character of the barrel is soft, entwined, and purposeful.
At maturity, I wanted to add a little something to compliment this delicate character, something to help accentuate the gin barrels. I texted our buddy Trevor at de Garde and asked for some dosing rates of a new to us ingredient - Spruce Tips. I brought in PNW Spruce Tips and we essentially "dry-hopped" the final beer with them right before packaging to encapsulate the freshest representation of the tips in the bottle as possible.

Bottle. Pours hazy yellow gold with small white head that diminishes to nothing. The aroma is strong spruce, rosemary, oak, earth, gin. Thin body, gin, spruce, earth, citrus, light oak, dry finish, enjoyed this.
