This Saison was open fermented with our house mixed culture and ambient microbes, before spending 14 months in barrels. Aged in our large French oak puncheons and then transferred to a freshly emptied Anejo Tequila barrel. This unique and rare Tequila barrel is constructed of French oak and is toasted but not charred, and before holding Anejo Tequila it held California Sauvignon Blanc wine. Notes of lime zest and caramelized agave are amplified by bottle conditioning with blue agave nectar. The finish is light and refreshing with moderate acidity, balanced funk, and plenty of oak.

Bottle, 750 ml shared with Max, Miro B and Zec. Cloudy golden, small white head. Fruity, citrus, lime, some funk, barrel, agave, touch of tequila. Juicy. Nice refreshing sourness and yet it had certain complexity to it.

LCI, left one, perfect with tacos. Nice light tequila, mellow funk. Lime zest vibes are real.
