Introducing BIRD BIRD, a 11% Tiki Stout...
We have been wanting to knock out this collab for quite awhile. Kyle from Horus Aged Ales is like a tiki super fan, like big time. Every time he’s in town we hit up Undertow and, well, we go a little crazy... So we’ve got a master at making adjunct stout, and the inspiration of Undertow and their quest for incorporating seemingly clashing ingredients into a real tasty beverage. The end result is a rich imperial stout, which was briefly aged (3mo) in hand selected Whiskey barrels from the Century Grand/Undertow team. This short aging time just got us that kiss of oak and spirit heat we were looking for to mimic the rum component. We then dosed it carefully and thoughtfully with toasted coconut & cocoa nibs. Definitely a rum based cocktail vibe coming through already at this point. We then “garnished” with some low levels of cassia & Ceylon cinnamon, Madagascar vanilla, Bergamot orange peel, nutmeg, and allspice. Big imperial stout meets tiki ingenuity. Good times.

Pint can pours with a deep dark chocolate colored body that supports a mocha colored head of foam. The aroma offers up chocolate fudge, some dark roasted malts and a sense of sweetened espresso coffee. The taste is smooth supple nimble dark chocolate, a chunk of fudge and a growing sense of dark roasted malts. It later picks up a burnt caramel sensation that further enhances the experience. This is a really nice sipper.
