We love nothing better than Belgian-style saison but with this blissful version we’ve added our own Wild interpretation of the style by adding a dash of funky Brettanomyces yeast plus roasted apricots and a hush-hush blend of spices. All of this makes for an extraordinary beer with an array of aromas that leap out of the glass followed by a spicy, fruity, tart and peppery palate and a long lingering finish.
Bliss can be drunk fresh or left to age when it becomes drier and more complex as the Brett (the yeast not our brewer!) gets to work in the bottle. This is the sort of beer where study and contemplation is essential.
50kg of roasted apricots went into the boil with more added to the fermentor as well as our blend of spices.

Bottled (Spontaneous KSMT tasting). Ambery brown colour with a small off-white head. Aroma is spicy, malty, mildly funky with some berries and dried fruits along with a slight sourness to it. Flavour is very similar, but somehow manages to work out quite well for my taste. Close on being a bit over the top though.

Meh, Aroma was definitely the best part here, with spice fruit perfume malt yeast and a little balsamic vinegar. Appearances average with a very short-lived head and a slightly hazy dark Amber. Flavor is fairly two-dimensional malty vinegar. Pucker up.

On tap at Tilt, Oslo. Slightly hazy deep amber with an off-white head. Fruity and slightly funky aroma with apricots, spices and some yeasty notes. Moderate sweet with nice acidity, mild funky and fruity flavours. High drinkability and quite refreshing.

330 ml bottle. Hazy orange color with white to off white head. Malty and yeasty aroma, caramel, light fruity, spicy. Sweet and light bitter taste. Medium oily body with soft carbonation.

Bottle. Pours a deep amber with an orange hue and a white head that dissipates to the edges. Aroma has sweet grains and spice with some apricot, both sweet and tart, underlying. Flavor starts with sweet apricot, sweet grain and light spice but finishes slightly tart. A bit thin.

Draft - Vintage 2013 - Funky berry and some plum. Cloudy copper with a decent beige head. Sweet fruity esters, plum. and some light grape funk. Funky weird, but just OK.

Mild cherry aroma. Cloudy rust, thin head. Tart currant initially, wood and cardamom at midpalate, milk chocolate and nougat finish. Light and tannic, virtually no carbonation. Wonderful subtleties, balance, and complexity. Distinct transitions. Dynamic. Paired well with my rare roast beef sandwich.
