We love nothing better than Belgian-style saison but with this blissful version we’ve added our own Wild interpretation of the style by adding a dash of funky Brettanomyces yeast plus roasted apricots and a hush-hush blend of spices. All of this makes for an extraordinary beer with an array of aromas that leap out of the glass followed by a spicy, fruity, tart and peppery palate and a long lingering finish.
Bliss can be drunk fresh or left to age when it becomes drier and more complex as the Brett (the yeast not our brewer!) gets to work in the bottle. This is the sort of beer where study and contemplation is essential.
50kg of roasted apricots went into the boil with more added to the fermentor as well as our blend of spices.

Draught @ Van Moll Brewpub. Nice amber reddish color, medium sized off-white to beige head. Smells quite herbal. Tastes sourish, lightly herbs or spices, a bit ’sharp’. Decent body and carbonation. Not bad but not really my thing.

A pleasing looking cloudy rusty coloured brew with a decent and long lasting head of foam.
It smells sour of the fruity kind. I can’t put my finger on which fruit is involved.
Apricots. I guess I should have read what was on the label. Roasted apricots? They do taste on the slightly burnt side but it doesn’t interfere much with the tasty sourness.
Mediumy body and carbonation.
I’m getting some light notes of Brett now but overall, this is not a brew that I fancy very much and isn’t worth the money I paid for it. Kind of Meh, to be honest.

Bottle from Oddbins, Blackheath. Honey coloured pour with a beige head. Quite a lively number. Lots of sweet spice aroma in there, splash of ginger and cinnamon with an added compliment of honey. Sweet medicinal flavours- tastes like something that could ease a cold. Not too bad.

33cl bottle. Appearance - dark amber with a nice generous head. Nose - dominated by the Brett but with just a hint of the apricots, you have to look for it, mind. Taste - more dominance from the Brett, with a mouthfeel that also suggests there’s a saison in there particularly. Palate - a light to medium bodied beer that has a creamy texture and the finish is dry and slightly sour and very long. Overall - tasty and enjoyable but the Brett took over almost completely so it really didn’t matter that there were apricots and spices in there.

Bottle from Final Gravity in Roseville, CA. Pours translucent copper with a slight beige head. Aroma seems to be mainly a herb. Had it, can’t come up with the name. The roasted apricots lurk beneath. Med minus body. Flavor is a twiggy/herb thing with the roasted apricots (try cooked) and some earth. If this is brettish, it’s mildly so. The twig/herb aspect isn’t all that attractive. Glad to have tried it, but not one of the brewery’s more interesting ales. Finishes pretty dry with a mix of strange things.

Tap at Spuyten. Medium brown-red with lace. Funky nose, chocolate, caramel, apricot, grass, ginger. Fruity, funky flavor, big malt, chocolate. Too malty, and not enough apricot or brett comes through. Ok though.

Bottle from BottleDog London and drunk at home. Hazy russet brown colouor with a thin beige head. Spicy aroma. which isn’t attractive to me. Better in mouth. Spices throughout. A little nutty in the mouth. It’s not really my thing as spices aren’t my favourite ingredient in a beer. Apricot? Well a little fruit maybe. OK, but I’m not keen on it.

Bottle. Spicy ginger, fruity caramel, and yeasty aroma. Hazy amber with a large off-white head. Slightly tart fruity malt, light toast, and bitter spicy flavor. Medium body, moderate carbonation. Reminds me a bit of a pumpkin or winter spiced ale.

Bottle: Poured a coppery to dark reddish orange with a huge tan lacing head. Aroma is strong fruit mainly apricots, spice, and souring notes. Upfront spiciness with fruit hints that balance. Dry peppery finish. Didn’t get the tartness that I thought I would have.
