Eleven is made with a single variety of hops, Phoenix, from the UK. Phoenix was developed at Wye College to be a high alpha acid (bitterness) hops with a British flavor profile. Phoenix is also low in cohumulone and high in aromatic oils, so you can throw a ton of ’em in and the beer will stay smooth and aromatic. This beer has 109 IBUs in it!
The taste profile is incredibly balanced and dangerously drinkable for an 11.7% brew. But don’t look for that grapefruity-piny taste you get from US hops (not that there’s anything wrong with that), these buds are fruity and earthy with an almost berry-like aroma, to give this beer a unique taste among big IPAs. Bitterness we got! And malt to back it up, with the result being a very intriguing beer you’ll just want to sip all night thanks to Phoenix hops. Cheers!

Bottle pours a hazy light amber witha nice full creamy head. Aroma is sweet brown sugary malty and hoppy and some alcohol. Flavor is intensely bitter and fumey. The characteristic alcohol burn as it goes down and the warming sensation eminating from my upper torso tells me this is a strong brew. The malt flavor is a bit woody and papery I thought but the hops rip you back to reality by the scruff of your neck demanding your undividing attention. It warrants it. Lingering earthy bitterness, and a moderate carbonation.

12oz Bottle pours out a nice amber with a white head. WOW what a kick. ok so 11.7% I was ready for it but not quit I guess. After a few more drinks i could start to tast the hops. Thanks Indiana_Red

Clear copper pour with sticky lace - nostril-burning, alcoholic aroma, with just a hint of malt sweetness breaking through - sticky sweetness in the flavor at first, followed by a drying hop bitterness, with a phenolic/alcoholic burn swelling up from underneath that - a hint of smoke and bread yeast underneath it all, but, aside from the expected citrus fruit esters, the flavors are hard to make out between the bitterness and the alcohol - maybe with some age this would be better, but this is terribly out of balance - how could they go from making double simcoe to making this?

Bomber poured cooper color with a small head. Light fills the beer but cannot see through it. Aroma is strong - spikey medicine-y pine. Taste is too hot, hops badly balanced seems like a mess. Just seems like they threw in a bunch of hops and thought they would have a hit. But mainly too hot.

In a pint glass....very malty taste and texture, with a deep amber color. The lab-made "phoenix hop" leaves an excellent lacing on the glass... A malty ., hoppy dry finish with a tinge of alcohol taste....bitter, bitter aftertaste...but I like it...Maybe its the pint glass, but the flavors are muddled, disguised in a hop and malt cover....this does mask the alcohol to a point....so now I try it in a snifter....ahhh the difference...the aromas change to a sour apple almost cider like quality....as I tried to document more of this tasty brew in the snifter, I slowly fell sleepily to the floor....and I drank no more.....

Rerate after Numenor’s raving. Clear amber color with a thin white head. Sweet caramel aroma, hints of pineapple. Caramel and citrus hops flavor. Originally sampled at RBSG06. Rating: 7/3/8/3/13
