Eleven is made with a single variety of hops, Phoenix, from the UK. Phoenix was developed at Wye College to be a high alpha acid (bitterness) hops with a British flavor profile. Phoenix is also low in cohumulone and high in aromatic oils, so you can throw a ton of ’em in and the beer will stay smooth and aromatic. This beer has 109 IBUs in it!
The taste profile is incredibly balanced and dangerously drinkable for an 11.7% brew. But don’t look for that grapefruity-piny taste you get from US hops (not that there’s anything wrong with that), these buds are fruity and earthy with an almost berry-like aroma, to give this beer a unique taste among big IPAs. Bitterness we got! And malt to back it up, with the result being a very intriguing beer you’ll just want to sip all night thanks to Phoenix hops. Cheers!

Bottle: Orange amber pour with light haziness, large off-white head. Lacing was immensely thick. Subdued (for an IIPA) aroma of sweet fruits and malt. Citrus is most noteable. Tasted citrus & pine hops with plenty of sweet malt, caramel, and more fruitiness. The tail is a lingering sweet and tart with a warmness from the high ABV. The finish seemed to linger forever! Thanks to DocLock for this gem.

Poured a murky copper with orange hues with a thin, creamy, lacing tan head. The moment the bottle openned the aroma of grapes permeated, similar to a pinot grigio. Up close the aroma is certainly hoppy, but more floral than anything else. Flavor was all over the place. Starts piney then shifts into a strange toasted grain flavor with hints of orange. Mouthfeel is heavy, lots of alcohol, plenty of heat and bitterness. The texture of the beer on the tongue really drowns the subtle flavors. I don’t think they picked the right malts to balance their hop experiment. If this is what a triple IPA is like, I’ll stick to the singles and doubles.

Bottle. Pours a hazy amber colour with an off-white head. Malty hoppy aroma. Malty hoppy pine needle flavor. Has a dry hoppy malty finish with a bitter aftertaste.

Bottle courtesy of Hopdog: Poured a cloudy light brown color ale with a big foamy head with good retention. Aroma of hops is quite easily noticeable but as well there is a good malt backbone as well as something sweet (honey?). Taste is a well balance mix between some medium bitter hops without any citrus profile and some sweet malt. Body is quite full and alcohol is well hidden. This is very well done and I appreciate the initiative to brew a IIPA without big citrus hops as I believe it has been done quite a few time before.

Bomber; nose with faint hops mixed with fruit, caramel, and citrus; orange with a small pale yellow head; flavor of spicy fruit mixed with caramel malt, all in a very thick body; light alcohol notes trail into a late arriving hop bitterness. This has a light barleywine flavor, more than an IIPA. Is this a BARLEYWINE IPA cross?

Bottle thanks to xproudfoot. Light orange to copper body, sediment-laden, thick cream head. Sweet, caramely aroma with abundant grassy hops with hints of citrus, but nothing overpowering; hints of tropical fruits also apparent. My overall impression of the body is a sugary alcoholic tea; the grassy, resiny hops overwhelm any complexity to be derived from the malt or yeast. It’s good to try a Double IPA that refrains from egregious use of the most popular American hops varieties, but it’s still too much.

An orange beer with a huge orange head. The aroma is sweet and very grassy, but also with a spicy note, that reminds me of Belgian beers. The flavor is very powerful, and very hoppy - like a strong hop soup, with a slight touch of oranges, and with a very bitter end. Good for hopheads.

This entered the glass with a thick, viscous pour of hazy amber, that raised a tall, thick, long lasting off-white head. Rich, complex caramel aroma that is reminiscent of a barleywine. Some alcohol. The flavor is sweet and alcoholic, again a barleywine comes to mind. A slight alcohol burn in the bitter finish. Good but off style. This is what I expect in an American Strong Ale or Barleywine.

The last couple of releases from this brewer have not impressed me excessively. Sampled from a 12 oz brown bottle this beer poured a hazy chestnut color with a large yellow-white head. The aroma is strong grapefruit, pine, pineapple and spice. The flavor is strong sweet pineapple, grapefruit and pine. The malt element is a bit lacking and this beer ends up being a pure hop bomb. The hops coat the tongue and take it hostage.
