Itβs never a bad day when I get to sample a new quadrupel. Barrel aged? Even better. A brewery from Texas? Iβm all over it. The 22 oz bomber was picked up at The Cellar in Odessa, TX several months ago. I am breaking out my Trappistes Rochefort glass for this one. It pours the classic quad body, dark brown with red highlights around the edges. It delivers an unusual gold-brown foam that promptly dissipates. A vigorous bubble action puts a steady ring of head at the top-center of the glass. I lift for the smell. Dark fruit, spun sugar. Good start. The taste, well, that is really nice. Chocolate, red plum, cherry, yeast. Quite thick in the mouth, it should be Deep Ellum, bravo.
