The very first product in our experimental odyssey towards interesting new IPA flavors and aromas. Central to this journey is an exciting new, Thiol-maximizing brewing ingredient called Phantasm. What’s a “Thiol,” you ask? In short, they’re a family of aroma and flavor compounds found in many of the foods and beverages we all enjoy so much - especially so in the juiciest of IPAs! Phantasm, a powder made from freeze-dried New Zealand Sauvignon Blanc grape skins, just so happens to be packed with juicy Thiol precursors - which when paired with the right yeast - unleash a torrent of bright, tropical flavors and aromas.

Juice Nexus was brewed with Saaz mash hops, Citra Lupomax, Mosaic, and a huge hit of Phantasm both in the whirlpool and dry hop additions. We’ll be honest, this beer was one wild ride all the way through! Two days into fermentation we picked up on crazy passion fruit, guava, and gooseberry aromas in our samples, which unfortunately faded slightly with even a light dry hop post-ferm. Nevertheless, we are super pleased with the results as a first step and base for future experiments (which are already in the tanks). We get pleasant but subtle candied-orange, guava and white wine notes on the nose, and a big bright citrus and passion fruit flavor shot with each sip.

Can (24072, so 3/12/24) pour from Manchester Wine and Liquors. Cloudy orange with dark floaties, tons of sparkle, nice head with excellent retention and light lacing. Aroma is musty grape, citrus, overripe melon. Taste is guava, passionfruit, grape. Smooth texture, soft carbonation and finish as taste. Decent complexity.
