Crafted from a bespoke blend of malted barely, wheat & oats, and fermented on a mixed culture of Lactobacillus & house yeasts, gives a smooth and silky mouthfeel. Coupled with a prominent sour profile which compliments the addition of plums & blackberries, before being laid to rest for 24 months in fresh Pinot Noir cask.
The outcome is a claret-hued fruited sour that exudes an aroma of oaks and Autumnal fruits. An initial taste of sweet plums and hand-picked cherries, unfolds into a layer of blackberry jam. Its resemblance to red wine shines on the finish, with a prominent, lingering tannic character.
