SPON 2025 is a blend of young and old barrel aged spontaneously fermented beer, with the oldest portion almost 4 years old now.
Brewed according to "Methode Traditionelle" guidelines, featuring locally malted barley and raw wheat, turbid mashing, extended boiling times, and aged whole leaf hops from Lakeview Hops in New Brunswick. This beer is produced in the same manner as a Gueze (blended Lambic), however that is a protected designation much like Champagne, Kalamata, Blue Stilton, and so many other tasty things — and y'all know how much we love legal battles so we're staying away from that.

375mL bottle, pours a cloudy, dark-ish orange with a small white head. Aroma has some phenols, light funk, and a touch of leather. Flavour definitely has some burnt rubber, light funk, some lemon tang, and a touch of leather. I can’t really get past the phenolic character. It’s not terrible, but the yeast expression just doesn’t work.

375mL bottle. Pours murky gold with a white head. Wild yeast, wood, and a bit of burnt rubber on the nose. Flavour has a bunch more phenols, dry wood, wild yeast. I do appreciate the intent that went into making this beer, but this didn't really turn out that well. I hope they continue to brew beer like this so that they can improve the recipe.
