We started brewing Caos in 2012. During the years we changed the way to make it getting closer to its “sister” L’Equilibrista. We now use 40% of Malvasia wine must (courtesy of Tenuta di Bibbiano, Siena, Tuscany) and 60% of wort (always our beloved Duchessa) and after the bottling we start a year long “Metodo Classico” process in all its steps. 36 The name “Malvasia” characterizes many vines, mostly whites, scattered all around Italy. All these vines share, with varying intensity, clean apricot and yellow fruit nuances, delicate musk fragrance and a very high sugar residue. These characteristics make the Malvasia vines particularly suitable for production of sparkling wines and “Passito”. This is why we choose this grape for our Caos, a great combination of fruity and oral aromas with the refreshing acidity typical of the white grapes. The vinous pro le is prominent but the complexity of taste and aromas are wonderfully supported by the elegant perlage and the smoothness of Duchessa. The result is explosive: an impressive freshness and a unique taste. Following the grape harvest, year after year we nd new, intriguing nuances, just like the wine tradition.

Bottiglia. Al naso arrivano impressioni di vinoso e di fruttato. La finezza olfattiva è elevata e il modo in cui permane è apprezzabile. Il cappello di schiuma resiste abbastanza. La grandezza delle bollicine è medio-fine. Il liquido è di apparenza velata. Bollicine fini costituiscono la forma del perlage. Il colore è giallo dorato brillante. Il corpo è pieno. Il dolce è di tipo zuccherino. L'amaro è di media potenza. La forza gustativa è elevata. La continuità gustativa è buona. Il gusto è piacevole. Le sensazioni boccali finali risultano di birra beverina. In bocca l'aroma è quello di miele, frutta secca, agrumi e Malvasia a frutto bianco.

Klare goldene Farbe mit weißer Schaumkrone. Malziger, etwas hefiger Geruch. Geschmacklich malzig, fruchtig, etwas Karamell und Trockenobst, Assoziationen an Wein. Mittlere bis hohe Süße mit mittlerer Bitterkeit, mittlerer bis voller Körper mit spürbarer Kohlensäure.

Tap @ Borefts. Blonde. Malty bready aroma with soft floral notes. Floral citric grapes flavor. The alcohol is well hidden.

Tap @Il Bancone in Borgorose-Italy. Hazy and sky Holden pour with a medium head lowering in a blink. Nose: thyme, sweet spiciness, mild canditi. Mouth: medium carbo, sweet malty blast, a bit too sweet imo. Spiciness is mild, body is esile.

Bottle. Light haze, rich gold color, white foam. Aroma: white wine, white raisins, flowers, a little spicy, light notes of cinnamon and nutmeg, a little cider. Taste: white wine, good apple cider, champagne, raisins, a little spicy notes.

Pours amber with a very quickly fading head. Nose shows champagne, apple cider, pear and delicate cherry. Flavours include more apple cider, raspberry and cherry, soft booze and white wine notes. Quite dry, finishes with a soft acidity.

Tap at Maxs. Filtered tan orange body. Not much of a head. Has those thick white wine grape tones. Definitely more grape than Saison. Downright juicy. Some funk creeps through. Worth the price of admission, very enjoyable. Tastes like it was aged in a soured white wine barrel. The sour barrel tones and Saison yeast give it an out there pineapple awesome falvor. Reminds me of Sweet Mullets sour stuff. Right on.

Bottle at Vinocom. Golden body, no head. Dry, slightly stale aroma of raisins and honey. Dusty taste, raisins, dry and sweetish. Equilibrista was very good, a well executed blend of beer and grapes/wine. Caos is less so in my opinion. I just don’t seem to dig the taste combo here.
