We started brewing Caos in 2012. During the years we changed the way to make it getting closer to its “sister” L’Equilibrista. We now use 40% of Malvasia wine must (courtesy of Tenuta di Bibbiano, Siena, Tuscany) and 60% of wort (always our beloved Duchessa) and after the bottling we start a year long “Metodo Classico” process in all its steps. 36 The name “Malvasia” characterizes many vines, mostly whites, scattered all around Italy. All these vines share, with varying intensity, clean apricot and yellow fruit nuances, delicate musk fragrance and a very high sugar residue. These characteristics make the Malvasia vines particularly suitable for production of sparkling wines and “Passito”. This is why we choose this grape for our Caos, a great combination of fruity and oral aromas with the refreshing acidity typical of the white grapes. The vinous pro le is prominent but the complexity of taste and aromas are wonderfully supported by the elegant perlage and the smoothness of Duchessa. The result is explosive: an impressive freshness and a unique taste. Following the grape harvest, year after year we nd new, intriguing nuances, just like the wine tradition.

Bottle 750ml.Clear medium orange yellow colour with a small, frothy - fizzy, fair lacing, mostly diminishing, off-white head. Aroma is moderate malty, hay, pale malt, citrus tart, moderate yeasty, champagne yeast, sharp yeast, light wine - grape. Flavour is moderate sweet and light moderate bitter with a long duration, sweet fruit, champagne yeast. Body is medium, texture is oily, carbonation is soft. [20131122]

Bottle. Pours dirty gold with white head. Nose and taste of white grape, lemon, champagne yeast, light sour malt and musk. Medium body. Very light acidity.

Bottle, 75cl. An unclear, orange-golden beer topped by a small, off-white head. Syrupy fruity nose with a faint spiced touch and some yeast. Citrus peel too. The flavor has lots of tropical fruits, quite a lot of sweetness and some faint bitterness. Medium body, some dryness, and with a sweet, fruity finish. Way too sweet for me this one. And it lacks a bit on carbonation. 131122

Bottle @ Scooper Tasting in Ulfborg. Pours hazy yellow with small off-white head. Clear aroma of flowers, malt and apples. Sweetish and sourish flavour of fermented apples and hops. High carbonation. Vinous belches and flowery finish. Nice.

Pours hazy golden with a small white head. Aroma has notes of malt, fruity, white wine and yeast. Taste is light to medium sweet and light bitter with a long white wine finish. Body is light to medium, texture is thin to oily, carbonation is soft.

Bottle @ Invasion U.S.A, Ulfborg 2013. Pours hazy orange with a small off white head. White wine, yeast and sour tart notes. I get chills.. Dust and vomit.

Ulfborg weekend celebration of nothing in particular. Cloudy orange with a small white head. Aroma of citrus and white grapes, and plenty of yeast. Dry and slightly tart fruity flavour with lots of wine character, I sense some late harvest wine character. There’s some annoying yeast in the nose, but the flavour is interesting

Bottle, 7.5%. Hazy dark yellow with small off-white head. Aroma is malt, fruit, baking yeast, phenols wine and spices. Flavour is malt, fruit, citrus, yeast, little acid, baking yeast, lots of wine, little dry and a little bitter.

Bottle @ fonefan tasting. Hazy golden with an off-white head. Aroma is sweet, malty, yeasty, white wine and a little alcohol. Flavor is quite sweet, moderate bitter and light acidic. Dry, moderate bitter and light acidic finish. 221113
