We started brewing Caos in 2012. During the years we changed the way to make it getting closer to its “sister” L’Equilibrista. We now use 40% of Malvasia wine must (courtesy of Tenuta di Bibbiano, Siena, Tuscany) and 60% of wort (always our beloved Duchessa) and after the bottling we start a year long “Metodo Classico” process in all its steps. 36 The name “Malvasia” characterizes many vines, mostly whites, scattered all around Italy. All these vines share, with varying intensity, clean apricot and yellow fruit nuances, delicate musk fragrance and a very high sugar residue. These characteristics make the Malvasia vines particularly suitable for production of sparkling wines and “Passito”. This is why we choose this grape for our Caos, a great combination of fruity and oral aromas with the refreshing acidity typical of the white grapes. The vinous pro le is prominent but the complexity of taste and aromas are wonderfully supported by the elegant perlage and the smoothness of Duchessa. The result is explosive: an impressive freshness and a unique taste. Following the grape harvest, year after year we nd new, intriguing nuances, just like the wine tradition.

Bottle @ fonefan tasting. Nice head with good duration. Color is golden. Aroma and taste are white wine, bretty notes, malt, fruits and hops.

Bottle. Pours a hazy golden color with a small white head. Has a fruity slightly sour tart yeasty aroma. Fruity sour tart yeasty flavor. Has a fruity sour tart finish.

Bottle thanks to Ansjelaah. Hazy yellowish to light orange to golden color, small off-white head. Very nice aroma of fruityness and wine with only the slightest sour hint. Tastes the same: winey, fruityness, peach and again just the slightest sourish hint. Well somehow I really like it. Nicely balanced, a bit dry in the finish, medium body and soft carbonation. Lovely.

Bottle @ benzai thx to ansjelaah. Hazy orange colour with small off-white head. Smells white wine, fruity (peach, apricot), wood. Tastes white wine, peach, sweet, wood (oak?).. Quite nice. I’m not a wine guy, but this is beer is a nice middle road between wine and beer. Medium body, nice carbo.

From tap at The Porter. Pours clear and golden orange with a small whitehead. Aroma is fruity and roasted malty. Mills citric and fruity. Wineous and wooden. Lingering fruity. Smooth wooden to wineous finish.

Aroma: This one has a fruity notes, with some sour yeast, and a definite champagne presence
Appearance: It pours a clear orange color with a rather fizzy head and no lace at all
Flavor: The tastes is much like the nose, it is yeasty, somewhat tart, and pretty sweet as well
Palate: This one has a medium body and, as was to be expected, a fairly fizzy carbonation
Overall Impression: I actually thought this was some really interesting stuff. I wasn't sure what to expect, but I couldn't not give it a shot, considering how unique it sounded. I'm glad I did.

Bottle from Eataly, Milan
Hazy blond color with almost no head. Apparently an ordinary beer, with subtle aromas, light fruits, very light incense; some fruity flavor too, very soft tannins, very light sourness. Low to ordinary bitterness.
Balanced and original.

@Internationaal Streekbierfestival, Zwevegem. Very special beer. More like a sparkling wine. Medium carbonation, no head. Amberbrown colour. Sweet, sour and bitter. Fruity. Nice experiment!
