Blend of first and second use gin barrel aged saisons conditioned on sitka spruce tips from the Oregon Coast

Base that started as a blend of mixed culture saisons aged in a single gin barrel. The barrel was a former pinot noir barrel that our friends at @pilothousedistilling aged their Painted Lady gin in (the gin is incredible, you should track down a bottle). After 6 months in the barrel, the blend was split 2 ways. Half was refermented on heirloom Royal Blenheim apricots that we picked in northern California. The other half was conditioned on Sitka Spruce tips that we picked on the Oregon Coast. Royal Blenheim is like summer in a bottle. The apricots lend tons of floral and honey notes and leave a bit of sweetness and body. Sitka Spruce drinks a bit lighter with a bright lemony character and a crisp, dry finish. Both are super balanced, soft saisons with subtle botanicals in the background. I hope you enjoy them as much as we do.

750ml bottle pours out golden topped with a small fizzy white head. Nose is nice spice from the gin barrel spuce tips and some tartness. Taste is more of the nice complex notes spice spruce pine notes barrel lots going on.
