A delicate balance of apple and brandy with a soft, slightly sweet finish. This is wonderful with soft cheeses. In the tradition of Normandy and Bretagne, we start fermenting fresh pressed cider apples in French oak barrels. At the precise hour, we add our own cider brandy to stop the fermentation and preserve the natural sweetness. It continues to age until it reaches maturity with an exquisite balance of fruitiness, body and alcohol.

Bottle sampled at Merridale, pours a clear caramel colour with a few bubbles. Aroma is very sweet, with treacly toffee, brandy liqueur, and syrupy caramelized apples. Flavour is along the same lines, with syrupy caramelized apples, booze, brandy liqueur and treacle. Syrupy palate that I'm sure would get cloying after a while. For what it is, it's very nice.

Bottle 375ml. red glass.[ Courtesy of fiulijn ]. Clear medium yellow colour with virtually no head. Aroma is moderate to light heavy apple, wood. alcohol, apple syrup notes. Flavour is moderate to light light heavy sweet with a long duration, sharp alcohol, apple, buzzy, alcohol. Body is medium, texture is oily, carbonation is flat, finish feel is moderate alcoholic. Bottle. Courtesy Alex. Yellow colour. Intense but not powerfull apple aroma. Vinius nice moderate apple flavor. Long fnish. Creamy palate. Special experience.

Bottle 37,5 cl. Courtesy of fiulijn. Clear golden with no head. Fresh vanillaish apple aroma - not Ice Cider sirupy complex though. Medium body with fine, clean apple notes. Gets a little hot towards the finish but otherwise the alcohol is not all too present. 200412

37.5 cl red bottle. Pours clear and golen yellow with a small white head. Dense apple fruity and light alcohol presence. Alcohol warmth and light citric apple fruity. Warming finish.

Bottled. A beutiful red bottle - the cider is golden when poured. The aroma has notes of apples and alcohol. The flavor is sweet with notes of over ripe apples and alcohol, leading to a dry apply finish. Thanks fiulijn for sharing.

Corked bottle from Spinnakers Spirit Merchants, Victoria
Blond color. Some aroma of apples, glue, chemicals. Sweet flavor, with just some apples, and a quite alcohol, boozy note. Warming alcohol feeling. Not convincing; too expensive.
