Many breweries making beer that has increasingly IBU and alcohol content, but we feel there are other ways to show creativity. Slottskällans Zero is an IPA without theoretical bitter, with an IBU of zero.
By using large amounts of hops, but only after the end of the cook, we get the best flavor and aroma from the hops. Sure it will be a little bitter, too, for formulas that calculate bitterness in beer is not true if taken to extreme product.

Bottle. Thanks to saintmatty for this one! Clear, amber liquid with medium off-white head. Aroma is hoppy with notes of tropical fruit (mango, pineapple), flowers, grapefruit, caramel malt, pine and some gooseberries (simcoe!). Really pleasant aroma. Taste is dry with high bitterness and a nice malty backbone with notes of biscuit and bread and also a nice, fruity hoppyness. Medium bodied with nice carbonation. Overall, a really good IPA, one of the better Swedish one’s I’ve had. Though, the bitterness is ironically a bit too high for it to be really drinkable.

Bottle from Uppsala. Hazy amber with a medium head. Fruity aroma with pine, citrus and grass. The taste was bitter and hoppy. Medium body with a bitter aftertaste. Not bad but a bit on the harsh side.

Big lasting offwhite head. Hazy amber body. Deep citric tropical fruit aroma with floral earthy notes. Dry-sweet mango and pineapple taste with mealy resiny notes. Mid-bodied. Sharpish mouthfeel. Dry mealy tropical fruit and resin aftertaste with spicy citric notes. Nice, if a little harsh. (0.3l draft at Tre Små Rum, Göteborg.)

Bottled, thanks SaintMatty. Clear amber, small head. Light grapefruit aroma. Mid sweet with clean mouthfeel and medium body. Some caramel, faint salty grapefruit. Salty, really bitter finish. Too clean to work really well.

330ml Bottle - Amber with a slight haze and a small head. Peach, pine, grapefruit and a hint of passion fruit in the aroma. Hoppy and moderately bitter taste with notes of grapefruit, toffee, malt and dried apricot. The aftertaste is fairly bitter and hoppy and lingers for quite a while.

Draught at De Klomp, Linköping, on January 7, 2012Clear deep golden to amber color, big lasting fluffy white head. Sweet, fruity, hoppy, fresh scent, somewhat grainy also, promises of bitterness to come. Hoppy, fruity, citrus, bitter taste. Medium mouthfeel, a bit moussy. High bitterness. When going back after drinking a sweet porter has real high perceived bitterenss, I’d lower my score if I had that beer before this one.
