Many breweries making beer that has increasingly IBU and alcohol content, but we feel there are other ways to show creativity. Slottskällans Zero is an IPA without theoretical bitter, with an IBU of zero.
By using large amounts of hops, but only after the end of the cook, we get the best flavor and aroma from the hops. Sure it will be a little bitter, too, for formulas that calculate bitterness in beer is not true if taken to extreme product.

Appearance: Cloudy golden color with a big creamy white head that ends up in a small layer, and actually leaves a fine lacing.
Aroma: Mild hoppy, very mild fruity and malty.
Palate: Medium + body. Slightly sweet and a rich bitterness. Soft carbonation.
Taste: Grape hoppy and fruity on a fine slightly sweet malty background.
Overall impression: Tasty, fresh and easy drinkable. Nice! A bit weird when reading how they made this. It is something about the bitterness I can not describe. Unusual.
Personal stats: Bottle from a trade with SaintMatty

(Draught at Stockholm Beer Festival, 29 Sep 2012) Amber colour with foamy, off-white head. Fruity, malty nose with grainy malt, a touch of caramel, citrus and apricots. Malty, hoppy taste with notes of caramel, orange peel, grapefruit, apricots, a slightly metallic malt profile and a generous citric bitterness in the finish. Medium body, with a certain sweetness. Nice one.

33cl bottle at Vulkan ølfestival. Pours deep golden to amber with an off-white head. Very hoppy aroma with tropical fruits, pine, malt and hints of caramel and spices. Lightly sweet and quite fruitywith a dry and bitter finish. Refreshing and nice IPA with pleasant bitterness. Wouldn’t mind drinking more of this one. (2012-10-03)

33cl bottle [from trade with SaintMatty] @ home shared with my dad. Hazy light orange color, small to medium sized off-white to beige head. Smell malts, clearly hops, lightly resinous even and light to moderately fruity. Taste malts, hops, medium bitterness, only slightly fruity. Very long lasting bitter finish. Medium body, medium carbonation.
